How To Keep Your Restaurant's Commercial Refrigeration Equipment Clean And Sanitary

by Brad Sullivan

When it comes to commercial restaurant equipment, your refrigerators and freezers are vital for keeping foods cold and safe from bacterial growth that can make your customers ill. While there isn't much you can do to maintain the freezers and refrigerators themselves, there are many things you must do to keep a commercial refrigerator clean and sanitary, including taking each of the following proactive actions.

Wash the Inside and Outside of Commercial Refrigerators Very Frequently

Nothing goes further keeping food products safe and sanitary than washing out the inside and outside of all refrigeration units on a regular basis. In addition to cleaning the door, cleaning the door gasket, and wiping down all shelves, make sure you also look under the refrigerator and make sure it isn't leaking any water or having any other issues a repair technician may need to investigate.

Commercial Refrigerator Gaskets Do Sometimes Fail and Need Replacement

One of the most important parts of all commercial refrigeration units is the door gasket. Door gaskets are responsible for keeping cooled air inside of the refrigerator and for keeping the warm air from the room outside of it.

As with the gasket on your home's refrigerator, the gasket on your commercial refrigerator is magnetized. After a while, the gasket will lose this magnetization. When this happens, the door will no longer close tightly or seal well. So, it's essential you check all commercial refrigerator gaskets on a regular basis. If the gasket is dirty, then it should be cleaned. When the gasket starts to fail, then it should be removed and replaced with a new one.

Check and Clean the Internal Air Filter

To keep the food inside of your refrigeration unit from tasting like onions or other strong-smelling foods also stored inside of it, your commercial refrigeration unit has an internal air filter. However, this filter won't work efficiently once it becomes full of dust or other grime. So, to keep things smelling fresh, make sure you regularly check and clean the filter.

Have Your Commercial Restaurant Equipment Regularly Serviced by a Professional

Finally, it's important to mention that while it's reasonable to only have residential appliances professionally serviced when they start having problems, this isn't the case for commercial restaurant equipment. Your freezers, refrigerators, and other appliances should be regularly serviced by a professional commercial appliance repair and maintenance technician. This ensures minor problems are discovered early and can be rectified before your restaurant loses products or makes someone ill due to a lack of proper refrigeration.
